Their songs recall complaints of hunger and cold alongside dreams of roasted chicken and cool wine.

So what did they actually eat? A detailed introduction traces the facts behind the legend: what Landsknecht life was really like, how they were fed, and what foods they knew and how they prepared them. Drawing on 15th and 16th century sources, the book collects over 50 recipes that were familiar to the Landsknecht and sustained them through good times and lean ones.

Each of the more than 50 original recipes comes with instructions adapted for the modern kitchen, alongside thorough descriptions of ingredients and basic dishes, plus detailed context on Landsknecht eating habits and table manners.

About the author

Volker Bach has spent twenty years active in Living History and has been fascinated by culinary history since his student days.
